Lemon Meringue Toffees – Only three everyday pantry ingredients needed to make these creamy, delicious toffees and it really tastes like Lemon Meringue !
Oh my goodness ! Do I have a delicious sweet treat for you today. Lemon Meringue Toffees and you only need three ingredients to make them.
And less than five minutes to prepare ? Yes, definitely my kind of candy – quick and easy.
These sweet, zesty toffees are so creamy, it is almost unbelievable. Gooey, but not so much that you will lose any teeth biting into one of these.
It may look like a Fudge, but to my meaning a Fudge is more sugarish whereas these delightful Toffees are soft and chewy. Nowadays all store bought Toffees seem to be in competition as to which one could break a tooth first.
And for the taste .. you would think it is a bite of Lemon Meringue Pie, without the crust.
If you prefer, sprinkle more grated Lemon Zest over just before chilling. However, be aware that the added Zest will also make them more zesty. I, for one, do not mind at all as I just love the zesty taste.
We had a couple of toffees left the next day and I took the above photo. The toffees are still creamy, soft and so gooey, but note the outside did dry a bit, just as it should.
I also cut them into tiny cubes as this is an extremely sweet treat – not that it stopped us from over indulging in these little gems 😉

Lemon Meringue Toffees ( 3 Ingredients )
Ingredients
- 1 can (397g) Sweetened Condensed Milk
- 250 g White Chocolate ( 8 oz ) good eating quality, chopped
- 1 Lemon juice and zest (finely grated)
Instructions
- Bring the Condensed Milk to a boil in a medium saucepan – lower heat and simmer 3 minutes, stirring continuously
- Remove from the heat – stir in the White Chocolate until smooth
- Add 1 tablespoon Lemon Zest and 3 tablespoons Lemon Juice, freshly squeezed from the Lemon – stir until well combined
- Pour into a lined {let the edges hang over for easy removal} standard size (20cm / 8″) round cake pan – or similar – chill 2 hours or until firm
Notes
Using a hot knife, cut into squares and serve.
