This Toffee Apple Cheesecake is to die for ! I combined two of my recipes and this Cheesecake was the final product.

Old-fashioned baked cheesecake with a gooey, sticky Toffee Apple topping. A hint of S’mores as well, and to end it off, drizzled with a thick Brown Sugar, Cinnamon syrup.

I most definitely had more than my (supposedly) share of this Cheesecake and who can blame me?

It might seem like a lot of work, but it is definitely not. I made the Cheesecake the night before, placed into the refrigerator once cooled, until the next day.

Whether you bake the Cheesecake the night before or on the same day when you want to serve this delicious dessert, keep this in mind :

  • Start making the Toffee Apple Topping about 4 hours before serving time, in order for the Topping to cool down completely.

This Cheesecake is most definitely not for you if you are on a diet !  Rich and sweet, but sooo good, you just might want to forget about your diet for a little while 😉 .

Ingredients
  

CHEESECAKE:

  • 1 ½ cups Tennis Biscuit Crumbs or Graham Crackers
  • ½ cup Unsalted Butter melted
  • 500 g Cream Cheese plain, softened (16 oz)
  • ½ cup Sugar
  • ¼ cup Sour Cream
  • 1 t Vanilla Essence
  • 2 extra-large Eggs

TOFFEE APPLE TOPPING:

  • ¼ cup Unsalted Butter
  • ½ cup Muscovado Sugar or any soft dark Brown Sugar
  • ½ cup Fresh Cream double cream/whipping cream
  • 3 Red Apples cored, peeled and cubed
  • ½ t Ground Cinnamon
  • 2 TB Muscovado Brown Sugar Extra
  • ¼ cup Marshmallows mini or small pieces

Instructions
 

CHEESECAKE:

  • Preheat the oven to 160 deg C (325 deg F) – line a standard cake pan with baking paper
  • Combine the Tennis biscuit {or other} crumbs with the melted Butter – press onto the bottom and up the sides of the prepared pan – keep aside
  • Beat the Cream Cheese until smooth – add the Sugar, Sour Cream, Vanilla and Eggs – beat together until well combined – pour into the crust – bake 50 – 60 minutes (the cheesecake should be set on the sides but still a little soft in the center)
  • Remove from the oven and let cool in the pan – once cooled completely place in the refrigerator for at least 4 hours to set properly

TOFFEE APPLE TOPPING:

  • Melt together the Butter and 1/2 cup Brown Sugar until bubbly – add the Cream and stir through – add the Apple and the Cinnamon – lower heat and simmer covered for 20 – 25 minutes or until the Apples are just tender
  • Carefully pour off the Sauce from the Apple – keep aside – continue to stir-fry the Apple gently until very sticky and looks almost translucent – remove from the pan and let cool completely until ready to use
  • Pour the retained Sauce back into the pan – add the remaining 2 TB Brown Sugar and simmer until the sauce has thickened
  • When ready to serve, scoop the Toffee Apple onto the Cheesecake and scatter with Marshmallow pieces – place under the oven grill for a minute or so, until the Marshmallow has puffed and turned light brown
  • Remove from the oven – transfer the Cheesecake to a serving dish and drizzle with the Sauce
