Double Chocolate Muffins

Chocolate Muffins are always a hit !  I made these to go with a Valentine's theme, because I think Valentine's Day {after the love you part} has to have chocolate and flowers.

These stayed moist and it seemed as if the chocolate {the chocolate chips}wanted to ooze out with every bite.

I mentioned before, I do not like to bake and decorate cupcakes - they are very finicky, it has to be mixed with more care than a muffin, and needs to be decorated/frosted, call it as you wish, nicely.

Muffins is really mix, a little stir and bake. No icing or whatever is needed. Roy and the two boys kept referring to the muffins as cupcakes, so I had to explain the difference - they did not really get it or cared what it is supposed to be called ... all they wanted to do was finish all 12 off in record time !

The Chocolate Heart shape is not necessary, but if you did not see my post on how to make the shapes quickly {without melting chocolate} you can read about it HERE.

Double Chocolate Muffins

{12 Muffins}

1 3/4 cups Flour
1 t Bicarbonate of Soda
1 cup Caster Sugar
1/4 cup Cocoa
100g Butter, melted
1 Extra-Large Egg
1 cup Plain Yoghurt
1/2 cup Milk
1/2 t Vanilla Essence
3/4 cup Chocolate Chips, divided

White Chocolate Hearts to decorate, optional
Edible glitter to decorate, optional

1.) Pre-heat the oven to 200 deg C (400 deg F) - Line a 12 hole muffin pan with paper liners.
2.) Sift the Flour, Bicarbonate of Soda, Caster Sugar and Cocoa together in a large bowl.
3.) Beat together the melted Butter, Egg, Yoghurt, Milk and Vanilla Essence - fold into the Flour mixture, but do not overmix.
4.) Add 1/2 cup of the Chocolate Chips to the batter and stir through - spoon mixture into the prepared muffin pan and sprinkle the remaining 1/4 cup Chocolate Chips over.
5.) Bake 12 - 15 minutes - remove and cool completely on a cooling rack.

If you do want to add the White Chocolate Hearts, wait only a few minutes for the muffins to cool slightly and whilst still warm, top with a Heart and sprinkle with Edible Glitter.

Again, great for Valentine's Day ! but feel free to enjoy them anytime, especially on blue Mondays - almost a guarantee that you will think it is close to Friday {whink}
