Moist Lemon Yoghurt Loaf

A Few months ago I made a Lemon Loaf, ugh... we were sour for a week afterwards!  I was a little sceptical when I looked at this recipe which I found in an old magazine.

How can it be a Lemon Loaf, besides the zest, there are no lemon in the batter? I soon found out - it is in the syrup, which seeps through the baked loaf.

See how moist it is....

The loaf does not rise very high. 

No need to serve this with anything else. Totally delicious on it's own {maybe with a cup of tea..?}

Moist Lemon Yoghurt Loaf

1 cup Cake Flour
1 t Baking Powder
Pinch of Salt
1/3 cup Oil {I used Sunflower Oil}
1 cup Sugar, divided
2 Extra-Large Eggs
1 TB Vanilla Essence
3/4 cup Plain Yoghurt
grated Zest of 1 Lemon
3 TB Lemon Juice

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 10 x 20cm loaf pan with Spray 'N Cook. 
2.) Sift together the Cake Flour, Baking Powder and Salt in a medium mixing bowl.
3.) Place the Oil, 200ml of the Sugar, Eggs, Vanilla, Yoghurt and Lemon Zest in a seperate bowl - whisk until well mixed - add to the Flour and beat gently until smooth.
4.) Pour the batter into the prepared loaf pan - bake for 45 minutes.
5.) Make the syrup a few minutes before the loaf is done in the oven - heat together the remaining 50ml Sugar and the Lemon Juice over medium heat, stirring until the Sugar has dissolved and formed a syrup.
6.) Remove the loaf from the oven and pour the syrup over immediately - let cool in the pan for 15 minutes - transfer to a wire rack to cool completely.

Serve and enjoy!  {ours disappeared very quickly...}
