Christmas Oatmeal Cookies (No-Bake)

Christmas and cookies is Holidays and cookies is December and cookies ! You see cookies are all over the internet now and this is the time to start baking !

Or not ! Make these easy no-bake cookies instead and let the kids help. The cookies will be a hit with everyone, young and old.

The recipe I am sharing today is for No-Bake Christmas Oatmeal Cookies, which is perfect for me.

Living in South-Africa with our wonderful, some days a little too hot, December weather. If I do not have to switch on the oven, I am happy as ever.

These oatmeal roll-type ball cookies are quick to prepare and I roll them into tiny balls, bite size really.

After making them and rolling into balls, it takes only a little while in the refrigerator to set and then they are ready to be dunked into cocoa and/or icing sugar – or both, as I have done here.

Christmas Oatmeal Cookies (No-Bake)

This recipe can easily be halved, doubled or even tripled and they keep well in a sealed container.

Ingredients to make No-Bake Christmas Oatmeal Cookies:

1/2 cup Sugar
1/2 cup Cocoa Powder
2 tablespoons Unsalted Butter
1/2 cup Milk

1/2 cup Coconut
2 1/2 cups Oats, (quick cooking type), processed to a finer texture
1/2 cup Nutella
1/2 cup Peanut Butter
1 teaspoon Vanilla Essence
Icing Sugar, to dust
Cocoa Powder, to dust

Instructions to make No-Bake Christmas Oatmeal Cookies:

1.) Place the Sugar, Cocoa, Butter and Milk in a small saucepan – bring to the boil and boil for 2 minutes.
2.) Add all the remaining ingredients and mix well (hands work best) – roll into small balls.
3.) Place on a baking sheet lined with wax paper – refrigerate 2 – 3 hours until solid.
4.) Roll in Cocoa Powder or Icing Sugar (or half of each)

  • ½ cup Sugar

  • Roll in Cocoa Powder or Icing Sugar (or half of each)

  • The quantity of cookies will vary, depending on the size the cookies are rolled
