This soup is delicious during Winter or Summer.  I sometimes enjoy it cold - Roy says no ways, if he has soup it has to be hot... oh, well, each to his/her own.

You can have this ready in a matter of minutes {no wonder I make it so often ! } It is a filling, yet inexpensive soup and besides the chicken, you should have everything else on hand.

Nowadays, with the kids off doing their own thing, Roy and I take turns in preparing dinner. Sometimes it is nice, we eat whatever and whenever we like {kids only like my Split Pea Soup}, but it seems such a waste to stand in front of the stove for hours or making a complicating, much preparing, meal when we are only two to feed.

We'll get used to it in time, I'm sure - for now I still catch myself cooking up a storm every now and then ! Fortunately neither of us mind leftovers the next day - another thing the kids are not fond of :-)


  • 1 bag {250g} Frozen Mixed Vegetables {I like the corn, peas, carrot and bean combination}
  • 3 TB Butter
  • 2 TB Cornflour
  • 3 cups Milk
  • 3 Chicken Stock cubes, crumbled
  • 1 Chicken Fillet, cooked and shredded
  1. Saute the Mixed Vegetables in the Butter {in a large pan} until tender but still crunchy.
  2. Use a little of the Milk and dissolve the Cornflour - keep aside.
  3. Add the remaining Milk to the Vegetables - bring to the boil - add the crumbled Chicken Stock and the dissolved Cornflour - cook over low heat for a few minutes until thick - add the shredded Chicken and heat through.

Serve immediately with freshly baked bread !
