Apple Summer Salad
Apple Summer Salad is a refreshing, delicious salad with Apple, Pineapple and more and drizzled with a light Poppy Seed dressing
I shared this delicious and very refreshing salad over at DIANE’S VINTAGE ZEST a few weeks ago and wanted to share it with you too.
Kids are especially very fond of this fruity Summer Salad as it is packed with not only Apples but with Pineapple as well.
Living in sunny South-Africa we have great weather just about year round. With the exception of a few weeks of low temperatures during Winter (which has started on June 1st ).
That being said, we do a lot of outdoors cooking, no matter the weather.
Especially over the weekends when we have lots of braaing (BBQ-ing) going on whilst watching a couple of Rugby games.
We enjoy this salad not only with grilled meats, but as a side salad to many pasta dishes as well.
Pasta dishes are normally filling enough to be served on it’s own.
But I do like to add a small side salad bowl to the meals as well. A something refreshing and crunchy is always welcome with a saucy pasta.

Apple Summer Salad
Ingredients
SALAD:
- 1 Green Apple cut into bite size pieces
- 1 cup Pineapple pieces
- ½ cup Celery Stalks chopped
- 1 cup Cherry Tomatoes halved
- 1 cup English Cucumber chopped / diced
- 2 handfuls Crisp Lettuce torn into smaller pieces
DRESSING:
- 1 TB Caster Sugar Superfine Sugar
- 1 TB Apple Cider Vinegar
- 1 t Olive Oil extra virgin
- 1 t Olive Oil extra virgin
- ¼ cup Low-Fat Sour Cream
- ¼ cup Low-Fat Sour Cream
- 1 t Poppy Seeds
- 1 t Poppy Seeds
Instructions
SALAD:
- Toss together the Apple, Pineapple, Celery, Tomatoes, Cucumber and Lettuce in a large mixing bowl – transfer to a salad serving dish
DRESSING:
- Combine the Caster Sugar, Vinegar, Oil, Sour Cream and Poppy Seeds until creamy – let stand for 5 minutes – drizzle over the salad
Serve chilled.

Your weather sounds very similar to Phoenix! 🙂 We only have a short time of "cold" weather, although it's not that bad compared to the rest of the country! Your salad sounds like it would be great for anBBQ!
