Not only is the meat flavored with Taco Seasoning, but the Mashed Potato are as well which works great in this easy recipe.

We thoroughly enjoyed this new spin on a Taco Pie and had absolutely no leftovers. Even though we were not 6 people having this, I listed this as enough for 6 servings and by that I mean 6 adult size servings.

Therefore if you have more kids than adults to feed, this dish can be stretched to up to 8 servings easily.

One thing to note** : the Mashed Potatoes must be as dry as you can make it. Add only the minimum amount of Milk and Butter and very little Salt and Pepper as Taco Seasoning will be added to the crust in the recipe.

Another way to dry out the Mashed Potatoes is to stir-fry the cooked potatoes prior to mashing using no oil or butter in a dry pan. Do stir continuously to avoid burning.

Ingredients
  

  • 2 ½ cups Mashed Potatoes cooked (see note** above recipe in post)
  • 1 packet Taco Seasoning divided
  • 1 TB Olive Oil
  • 450 g Lean Ground Beef ( 1 pound )
  • ½ cup Onion chopped
  • ½ cup Salsa
  • 1 cup Lettuce shredded
  • 1 Tomato diced
  • 1 ½ cups Cheddar Cheese grated
  • 1 Avocado diced
  • Salt and Black Pepper to taste

Instructions
 

  • Pre-heat the oven to 180 deg C (350 deg F) – spray a large pie dish with cooking oil
  • Mix the Mashed Potatoes with 2 tablespoons of the Taco Seasoning – press into the pie dish, bottom and sides – bake 10 minutes until just brown
  • Heat the Olive Oil in a pan – cook the Ground Beef and the Onions until done – drain excess liquid if necessary
  • Add the remaining Taco Seasoning and Salsa – cook until bubbly {add more Salt if you prefer} – pour the meat mixture into the Potato crust – bake 15 minutes – remove from the oven and let cool for 5 minutes
  • Sprinkle the Cheese over the meat, followed by the Lettuce, Tomato, Sour Cream and Avocado
  • Season with Salt and Black Pepper

Serve immediately as this dish can not be warmed up later. Well, you can if you like warm lettuce and Avocado but I would not recommend that 😉 .

Something about sour cream, avocados and summer that just go perfectly together! Mashed potatoes is a new twist. I think my family will love it:)
