Have leftover rice? Or are you looking for a new way to serve rice ?  Either way, this recipe for a Spanakopita Brown Rice Bake will do and is sure to become a family favorite.

I had leftover brown rice the other day and I had the odd bit of spinach leftover as well. What to do ? I was not really looking – or even thinking about it at the time – for a specific recipe where I could use these 2 ingredients, either for 2 different dishes, or combine the 2 into one.

Whilst I was browsing a foodie magazine, my eye caught the photo first {of course!} and then the name “Spanakopita ….” I only had to read the bit about Spanakopita and knew I found a recipe to use both the rice and the spinach in one.

I have eaten authentic Spanakopita before and loved it, however, I have never made it myself – reason : pure laziness and also procrastination ! It is one of those recipes which I am almost sure I will put a lot of time in and then mess it up..

Now, this recipe for the Spanakopita Brown Rice Bake does not have any Feta cheese added to it, but feel free to substitute the Parmesan for Feta.



2 TB Extra Light Olive Oil
1 Onion, halved and thinly sliced
3 cups Brown Rice, cooked
4 cups Spinach, chopped
1/4 cup Water
1/2 t Nutmeg
1/2 t Salt
Freshly Ground Black Pepper, to taste
3 TB Basil Pesto
4 Extra-Large Eggs, beaten
1/4 cup Parmesan   {I used the very finely grated type}
Rocket {Aragula}, to serve
Cherry Tomatoes, to serve


1.) Pre-heat the oven to 180 deg C (350 deg F) – spray an ovenproof dish with cooking oil.
2.) Heat the Olive Oil and saute the Onion until soft – add the Brown Rice and stir-fry for 3 minutes.
3.) Add the Spinach, Water, Nutmeg, Salt and season with Black Pepper – stir well to combine – cook until the Spinach has just wilted – remove from heat and cool slightly.
4.) Stir through the Pesto and the Eggs – scoop mixture into the prepared oven dish – bake 15 minutes.
5.) Sprinkle with the Parmesan and return to the oven for another 10 – 15 minutes or until the Rice Bake has set.

Serve with the Rocket {Arugula} and Tomatoes.  This dish is equally delicious served warm or cold.
