Coffee Custard Mini Pies

These Coffee Custard Mini Pies are perfect as a tea-time treat with a friend or two. Or for those days when you are going somewhere and want or need to take with a plate with some sweet treats.

The only thing with this recipe is that you need to remember to defrost a roll of Puff-Pastry {which is something I always seem to forget!} Other than that, the filling is a breeze to make and baking does not take long as well.

The filling puffs up quite a bit whilst baking, therefore do not over fill the pastries before baking. And yes, they fall almost flat again once baked.

What more can you ask for in a sweet treat - especially if you are a coffee lover ? Creamy, tasty filling with flaky pastry ... always a winner !

COFFEE CUSTARD MINI PIES

24 Mini Pies

INGREDIENTS:

1 TB Instant Coffee Powder
1 TB Boiling Water
1 TB Cornflour
2/3 cup Caster Sugar
2/3 cup Fresh Cream
1/3 cup Milk, divided
4 Large Egg Yolks, lightly beaten
1 Roll Frozen Puff Pastry, defrosted

Cinnamon Sugar, to sprinkle

DIRECTIONS:

1.) Pre-heat the oven to 230 deg C (450 deg F) - spray 2 x 12 hole patty pans (or mini muffin pans) with cooking oil.
2.) Dissolve the Coffee in the Boiling Water - add 2 tablespoonfuls of Milk and stir in the Cornflour.
3.) Add the remaining Milk and the Cream - whisk well to combine.
4.) Stir in the Caster Sugar until it has dissolved - add the Egg Yolks and mix well {mixture is very thin}
5.) Roll out the Pastry - cut out 24 rounds - fit into the baking pans {patty or mini muffin}
6.) Fill the Pastry two thirds with the Coffee mixture - bake 15 - 20 minutes or until the custard has set and the Pastry is crisp {the custard will rise when baking but drop when cooling}

Remove from the oven - let cool in the pans for a minute or two - transfer to a cooling rack until completely cooled - sprinkle with Cinnamon Sugar and serve.
