Chewy Date Balls

I made these Date Balls as an addition to our Christmas cookie platter and was totally impressed how they turned out. Chewy, with bits of crunch and just sweet enough to my taste.

Years ago, I made something similar, but it had Rum added and I can not remember it having any bits of cookies in.  I much prefer this version, but if you like a Rum flavored Date Ball, go on ahead and add some Rum, either the liquor itself or rum essence will do as well .... quantity ?... well, that I'll leave up to you !


20 - 25 Balls


1/2 cup Butter
250g Dates, finely chopped
1 Extra-Large Egg, beaten
1 cup Shortbread Cookies, plain, chopped roughly {to your preference}
1/2 cup Desiccated Coconut


1.) Heat the Butter over low heat - add the Dates and stir until soft - remove from the heat.
2.) Mix a little of the Date mixture into the beaten Egg, stir quickly and repeat {this is to slowly heat the Egg without cooking it}
3.) Add the slightly warmed Egg into the saucepan with the Date mixture, stirring vigorously - return to the stove plate and cook another 1 minute, keep stirring.
4.) Remove from the heat and add the Cookie bits - stir to mix - chill mixture for 45 minutes.
5.) Roll into small golf ball sized balls and cover with Coconut
Serve immediately or store in an airtight container in the refrigerator.
