Soft Banana Bread Cookies

 I have the most delicious cookie recipe for you today. It really is banana bread, only in cookie form !

The only regret I have is that I only made one batch !  But, seeing as we are only three people during the week, I did not want to overdo it with these cookies - which of course, I wasn't even sure would be liked, never mind become a huge hit.

None of us could stop eating, and I admit, without any shame or guilt - we finished the batch off within an hour.

The batter is dropped by the teaspoonful and it will then spread out to form a cookie, so be sure to leave enough spaces in between. Also, if you want to make bigger ones, use a patty pan or a whoopie pie pan.  {that is what I'll be using next time - soon!}

Soft Banana Bread Cookies

  • 1 cup Sugar
  • 1/2 cup Butter, softened
  • 2 Extra-Large Eggs
  • 1 1/3 cups Ripe Mashed Bananas
  • 1 t Vanilla
  • 2 cups Flour
  • 1 t Baking Soda
  • 1/4 t Salt
  • 1/3 cup Chocolate Chips
  1. Pre-heat the oven to 180 deg C (350 deg F) Line 3 or 4 baking sheets with baking paper.
  2. Cream together the Sugar and Butter until fluffy.
  3. Add the Eggs one by one - beating after each addition - add the Banana and Vanilla - beat until well mixed.
  4. Gradually add the Flour, Baking Soda and Salt - mix until just combined.
  5. Fold in the Chocolate Chips.
  6. Drop teaspoonfuls onto the baking sheets - be sure to leave enough space as these cookies spread quite a bit whilst baking.
  7. Bake 10 - 12 minutes until golden - cool completely on wire racks.
