Christmas Oatmeal Cookies {No-Bake}

No-Bake Christmas Oatmeal Cookies - Nutella, Peanut Butter ... perfect holiday cookie !

Christmas and cookies ~~ Holidays and cookies ~~ December and cookies ~~ you see cookies are all over the internet now and this is the time to start baking,,,, or not !

The recipe I am sharing today is No-Bake Christmas Oatmeal Cookies, which is perfect for me, living in South-Africa with our wonderful, some days a little too hot, weather. If I don't have to switch on the oven, I am happy as ever.

These are quick to prepare and I roll them into tiny balls, bite size really. After making them and rolling into balls, it takes just a little while in the refrigerator to set and then they are ready to be dunked into cocoa and/or icing sugar - or both, as I have done here.

This recipe can easily be halved, doubled or even tripled and they keep well in a sealed container.

Christmas Oatmeal Cookies {No-Bake}

1/2 cup Sugar
1/2 cup Cocoa Powder
2 TB Butter
1/2 cup Milk
2 1/2 cups Oats, {quick cooking}, processed to a finer texture
1/2 cup Coconut
1/2 cup Nutella
1/2 cup Peanut Butter
1 t Vanilla
Icing Sugar, to dust
Cocoa Powder, to dust

1.) Place the Sugar, Cocoa, Margarine and Milk in a small saucepan - bring to the boil and boil for 2 minutes.
2.) Add all the remaining ingredients and mix well {hands work best} - roll into small balls.
3.) Place on a baking sheet lined with wax paper - refrigerate 2 - 3 hours until solid.
4.) Roll in Cocoa Powder or Icing Sugar {or half of each}
