Twinkie Cupcakes

Homemade Twinkies, but in cupcake form, taste just like the real thing! Twinkies have been on my top list of sweet treats since the first one I had.

The kids used to ask for Twinkies just about every day when they were still at school. I always packed them a lunch consisting of a healthy sandwich or two, a fruit juice and a sweet treat. After a while I started to buy Twinkies by the box {not the 8 pack - an actual box with 12 x 8 packs }

Since they are no longer at school, or for that matter much at home, I do not buy Twinkies anymore. I might grab a single one now and then, to satisfy my own craving ;-)

I found that making the filling first, then chill until the cupcakes are baked and cooled, works much better. The cupcakes should really only be refrigerated if, and I repeat, if, there are any leftovers.  The filling is quite runny when just mixed, hence the chilling beforehand.

TWINKIE CUPCAKES

Ingredients
  • 1 1/2 cups Icing Sugar
  • 1 cup Margarine, room temperature
  • 2/3 cup Fresh Cream {double cream/whipping cream}
  • 1 Cake Mix, Vanilla flavor
  • 4 Egg Whites
  • 1 cup Water
  • 1/2 t Vanilla Essence
  • Icing Sugar, for dusting
Directions
  1. Preheat the oven to 180 deg C (350 deg F) - spray a 12 hole muffin pan with cooking spray.
  2. Beat together the Icing Sugar, Margarine and Cream until well mixed - chill for 30 minutes, to set slightly.
  3. Combine the Cake Mix, Egg Whites, Water and Vanilla in a medium mixing bowl.
  4. Scoop the batter into the prepared muffin pan - bake 12 - 15 minutes - remove from oven and cool completely on a cooling rack.
  5. Slice the cupcakes in half when cooled - spread the bottom half with the Creamy Icing mixture and replace the top half - dust with Icing Sugar.
  6. Serve immediately.
Notes
The filling will be runny when mixed but will set after a little while in the refrigerator.

  2. Twinkies by the case? You crack me up! These look pretty delicious! My sister finds chocolate twinkies once in a while down in Mississippi. I have only found them once..but they are pretty good too!
