Mushroom & Feta Pies

Mushroom & Feta Pies

Great as an appetizer or even as a side at a BBQ.  I have to admit, this was one 
of those recipes which I had second thoughts about.

When cooking a Mushroom, a lot of juice runs from the mushroom, and I thought 
maybe the puff pastry would come out soggy, but it did not. The pastry and the 
mushroom stuck together as one when cooked and the pastry was indeed crispy as 
it should be.

You can use any Pesto you like, I prefer a good Basil Pesto above any other 
flavor in most of my cooking.

12 Single Portions

1 Roll Frozen Puff-Pastry, defrosted
12 Large Brown Mushrooms, stems removed, but keep half aside
1 Large Egg, beaten
2 Rounds of Feta Cheese, finely chopped
1/4 cup Pesto, any flavor {+ extra to serve}

1.) Pre-heat the oven to 200 deg C (400 deg F) - line a baking sheet with baking paper.
2.) Cut rounds, approximately the same size as the Mushrooms, from the Puff-Pastry - place on the baking sheet and brush each piece with the beaten Egg.
3.) Chop the retained Mushroom stems finely, add the Feta and the leftover Egg - mix well - add the Pesto and stir through - scoop into the Mushrooms, pressing to cover/fill the full opening.
4.) Bake 15 - 20 minutes or until the pastry is golden and puffed  - an accumulation of sauce might form around the pastry, just cut that away {I know, cut sauce away sounds strange, but it sort of sets}Serve with additional Pesto on the side.
