Butterscotch Popcorn Bars

Salted Popcorn mixed into Butterscotch with a crumbly crust and a chocolate topping - simple, but what a treat ! And .... one of my favorite ingredients - COCONUT !

There are so many textures in these little sweet treats - crunchy popcorn, gooey butterscotch, crumbly crust and the smooth chocolate topping. In my book, this is one amazing sweet, salty treat which is loved by all, but especially kids.

If you'd like a more stable crust, increase the butter to 150g. I liked the crumbly crust and would make it the same way again.

250g Tennis Biscuits, crumbled finely     {or Graham Crackers}
125g Butter, melted
1 can (397g) Sweetened Condensed Milk
30g Butter, extra
4 cups Air-Popped Salted Popcorn
1/2 cup Coconut, toasted
2 slabs {100g each} Milk Chocolate, melted {the eating kind, not the one for baking}

  1. ) Line a 20 x 30 cm dish with baking paper, leaving enough paper to hang over the edges.
  2. ) Combine the Biscuit Crumbs and the Butter - press into the bottom of the prepared dish - refrigerate for 20 minutes.
  3. ) Heat the Condensed Milk and the extra Butter in a large saucepan - cook, stirring continuously, over medium heat for around 10 minutes, until the mixture is a caramel color - remove from heat.
  4. ) Quickly stir in the Popcorn and the Coconut - mix to combine - press over the crust.
  5. ) Pour the melted Chocolate over the Popcorn mixture and chill until set.
Slice into bars and serve !
