It is time for the monthly Dessert Challenge again, hosted by Sheryl, from LADY BEHIND THE CURTAIN !

Our two main ingredients for this month's Dessert Challenge are Peaches and Cream ! 
Unfortunately, it is Winter in South-Africa and I could find no fresh Peaches - well, over to the all trusting canned Peaches then.

makes 1 liter Ice-Cream

1 can (410g) Peaches in Syrup
+/- 1 cup Water 
1/3 cup Sugar
1 cup Fresh Cream  {double cream/whipping cream}
1 cup Greek Yoghurt
White Chocolate Cups   {use good quality chocolate when making the cups}
Extra Peach slices & Mint leaves, to garnish.

1.) Drain the Peaches - pour the Syrup into a microwavable measuring jug - add Water to the 300ml mark.
2.) Add the Sugar to the Syrup/Water - microwave 1 - 1 1/2 minutes until Sugar has dissolved - let cool.
3.) Beat the Fresh Cream until just stiff {do not over beat} - keep aside. 
4.) Place the Peaches into a blender and blitz to a pulp - add to the cooled Syrup - stir into the Yoghurt.
5.) Gently fold the whipped Cream into the mixture - transfer to an ice-cream container - freeze for two hours - remove from freezer and stir well to break up any ice crystals which may have formed - freeze for at least 4 hours before serving.
6.) Remove Ice-Cream from the freezer and leave to stand 10 - 15 minutes.
7.) Scoop into the Chocolate Cups and garnish with extra Peaches & Mint leaves.
