Peaches 'n Cream Profiteroles

Usually it is Strawberry 'n Cream, but today it is Peaches 'n Cream ! A simple, delicious dessert.

I made these Profiteroles a little bigger than normal to be large enough to handle a few slices of peaches as well as silky smooth whipped cream.

One was enough per person and we enjoyed this a lot. Sometimes one just get tired of the over the top stuffed or rich desserts and this is perfect. They are also quick to make which helps when I am pressed for time {by that I mean ... I needed more time to finish a project or two ! }


{6 large servings}

1 1/3 cups Flour
1 TB Cornflour
1 cup Water
1/2 t Salt
100g Butter
4 Eggs

1 can (410g) Peaches, sliced, drained
2/3 cup Fresh Cream  {shipping cream/double cream}
1 TB Caster Sugar
1/2 t Vanilla
Icing Sugar, for dusting

1.) Pre-heat oven to 180 deg C (350 deg F) - line a baking sheet with baking paper.
2.) Mix the Flour and Cornflour together, keep aside - Bring the Water to the boil in a medium pot - add the Salt and the Butter - Once all the Butter has melted, add the Flour/Cornflour - stir constantly, over medium heat until a smooth ball forms - keep beating another 2 minutes {this is to "dry" out the dough as much as possible}
3.) Transfer to a mixing bowl - add the Eggs, one at a time, beating well after each addition.
4.) Pipe or spoon the dough onto the lined baking sheet  {I made 6 and spaced them well apart} - bake 20 - 25 minutes - make a split upon removal from the oven to let the steam escape - let cool completely.
5.) Beat the Fresh Cream until almost stiff - add the Caster Sugar and Vanilla - keep beating until smooth and silky.

Slice the Profiteroles - fill with Peaches and Whipped Cream - dust with Icing Sugar.

Serve and enjoy!
