Cake Mix ROLO Cookies

Seems I am baking more cookies the past few months than ever before. The internet is such a wealth of ideas, and I am always looking for something simple, quick AND delicious.

Well, I most definitely found all of the above in the recipe I found HERE on the SIX SISTERS STUFF's website.

I have never seen the Devil's Food Chocolate Cake mix in our stores, and just substituted it with an available Chocolate Cake Mix.  {I am not a fan of Cake mixes as I think the price for the box is about four times higher than when you mix your own - but I really wanted to try this specific recipe and besides, it was QUICKER than when you have to mix your own ... ok, I know - that is the point of Cake mixes!}

Cake Mix ROLO Cookies

{30 - 36 cookies}

2 Extra-Large Eggs
1/3 cup Oil
1 Box Chocolate Cake Mix
+/-  36 Rolo candies

1.) Pre-heat the oven to 180 deg C (350 deg F) - Line 2 - 3 baking sheets with baking paper.
2.) Beat together the Eggs and Oil - add the Chocolate Cake Mix - beat until mixed {it might look a little dry, but should easily form a ball - if not, add a little more Oil}
3.) Form balls, about 2 1/2cm (1 inch) - make a slight indentation in each ball and insert a Rolo candy - pinch close the balls.
4.) These cookies spread quite a bit, so make sure to leave enough space between the balls on the baking sheets.
5.) Bake 8 - 10 minutes - remove from oven - leave on sheets to cool for a few minutes - transfer to a cooling rack to cool completely.

The Rolo candies will spread through-out the cookie and is so chewy !  Keep all leftovers in an airtight container.
