Hello Dollies {Chocolate-Coconut Bars}

Who follows Michael Wurm{jr} on Pinterest?  No?  You should !  I love all his pins and I think my very first pin was something I re-pinned from him.  {and a lot since}

Michael comes up with only the best stuff, whether it is home decor, recipes or clothes.  No wonder he has more than 3.5 million followers on Pinterest. If you want to check him out go HERE.

Ok, so yesterday, he posted this recipe, on his blog, for Hello Dollies and it immediately grabbed my attention, because, really ... chocolate, coconut ?!  It was also new to Michael and according to him it is a Southern delight... I am taking his word on this as I, myself aren't even on the same continent.

I had to adapt his recipe just a tiny bit as we do not have Graham Crackers, but I have since learned that our Tennis biscuits can be used in most of the recipes which calls for Graham Crackers.

So, here we go:

Hello Dollies {Chocolate-Coconut Bars}

{adapted from : Inspired By Charm - original recipe can be found HERE}

2 packets (200g each) Tennis Biscuit, crushed finely   {or Graham Crackers}
3 TB Cocoa Powder
1/4 cup Sugar
1 cup Butter, unsalted, melted
1 cup Pecan Nut pieces
1 cup Semi-Sweet Chocolate chips
1 can (397g) Sweetened Condensed Milk
1 1/2 cups Sweetened Shredded Coconut
1/2 cup Milk Chocolate, optional - to drizzle over

1.) Pre-heat the oven to 180 deg C (350 deg F) - Line a 20 x 30 cm baking sheet with baking paper - let the paper hang over the edges {for easy removal later}
2.) Combine the Tennis Biscuits, Cocoa Powder, Sugar and melted Butter {the food processor works very well} - press this crust mixture into the prepared baking sheet - bake 10 minutes - remove and let cool for about 20 minutes in the baking sheet set on a cooling rack.
3.) When cooled - sprinkle the Pecan Nuts and the Semi-Sweet Chocolate chips over the crust - pour the can of Condensed Milk over and spread lightly to cover all over - Sprinkle Coconut over the Condensed Milk - bake for another 10 - 15 minutes, until the Coconut is lightly toasted.
4.) Remove from oven and let cool completely.

When cooled, drizzle with Milk Chocolate {if using} place in the refrigerator to harden and cut into bars {size - up to you!}.

Enjoy!  I know I am enjoying a piece right now and it is pure delight ...
