I have a delicious muffin recipe to share with you today. If you have been following the blog for a while, you might know that I prefer baking muffins to baking cupcakes by 99% - simply because muffins, in general, do not need to be iced in any fancy way.

These Lemon Blueberry Muffins, which is also fat-reduced, are great to serve for breakfast and even better to pop one or two into the kids' {or your own!} lunch boxes.

Blueberry is a power fruit and delicious in any way served, but with the light Lemon added and Wholewheat Brown Flour, this is quite extraordinary - delicious, moist, healthy, low-fat, energy boosting ...

Dimitri did pull a face when he tasted the icing, therefore if your family does not like sour, leave out the Lemon Zest in the Icing and it should be fine. He did however like the muffins a lot and asked me to make it more often.


12 Muffins


1 cup Flour
1 cup Wholewheat Brown Flour
2/3 cup Caster Sugar
1 1/2 t Baking Powder
1/2 t Baking Soda
Pinch Salt
1 cup Fresh Blueberries
1 TB Lemon Rind, grated, divided
3/4 cup Fat-Free Plain Yoghurt
3 TB Extra-Light Margarine, melted
1 TB Lemon Juice, divided
1 Large Egg
1/2 cup Icing Sugar


1.) Pre-heat oven to 200 deg C (400 deg F) - spray and line a 12 hole muffin pan.
2.) Combine the Flour, Wholemeal Flour, Caster Sugar, Baking Powder, Baking Soda and Salt in a medium mixing bowl - add the Blueberries and 2 teaspoons Lemon Rind - mix gently.
3.) In a separate bowl beat together the Yoghurt, Margarine, 1 teaspoon Lemon Juice and the Egg - make a hole in the dry ingredients - pour the Yoghurt mixture into the hole - stir to mix {do not over mix}
4.) Spoon the batter into the prepared muffin pan and bake 15 - 18 minutes or until golden.
5.) Remove from the oven and pan - let cool completely on a cooling rack.
6.) Combine the remaining Lemon Rind and Lemon Juice with the Icing Sugar - drizzle over the cooled muffins and serve.

  2. I'm torn ... I love muffins and cupcakes! I love how simple muffins are and they do make a great breakfast! Lemon and blueberry were made for each other in my opinion! :)
