Beef and Mozzarella Quesadillas

Beef and Mozzarella Quesadillas
Quesadillas must be one of the quickest, easiest and most versatile meals. One could really fill two tortillas with anything and have a rich {or not} meal as you'd like. But as with most recipes, there had to have been the first Quesadilla, which as I see things would then be the actual authentic recipe.

Okay, I'm babbling here ... These Beef and Mozzarella Quesadillas are perfect for dinner, or cut into smaller wedges, they're just fine for lunch as well - especially as a special kid's lunch after school, perhaps ;-)


6 - 8 Servings


2 TB Olive Oil
2 Onions, thinly sliced
2 t Garlic, crushed
1/4 t Chili Flakes
500g Lean Ground Beef
Salt & Pepper, to taste
1 can (400g) Chili Beans
3 cups Mozzarella Cheese, grated
4 Handfuls of Fresh Spinach, chopped roughly
4 Large Tortillas
1/2 cup Cheddar Cheese, grated


1.) Pre-heat the oven to 160 deg C (325 deg F) - line two baking sheets with baking paper.
2.) Heat the Oil and saute the Onion, Garlic and Chili Flakes until soft and fragrant - add the Ground Beef and cook until done - season to taste with Salt & Pepper.
3.) Add the Chili Beans and cook another 2 minutes - remove from heat.
4.) Place a Tortilla on each lined baking sheet - sprinkle half the Mozzarella Cheese over the two Tortillas - place a layer,1/2 of the Spinach over the Mozzarella, followed by the meat mixture - add another layer of Spinach and the remaining Mozzarella.
5.) Top each stacked Tortilla with the remaining two Tortillas - sprinkle with Cheddar and bake for 15 - 20 minutes or until the edges are crispy and the cheese has melted.
6.) cut into wedges and serve.
