Baked Caprese Chicken

I have become a huge fan of Basil over the last couple of months. Basil is not only a herb for savory dishes or salads, it is also delicious in fruit drinks.

Caprese is the Italian word which denotes a salad consisting of Mozzarella, Basil and Tomato, but I have seen it in so many different ways nowadays, making everything Caprese delicious !

Add some chicken and here we have a Baked Caprese Chicken which is moist, tender and with all the flavors from a fresh Caprese salad.



I had one baked Chicken piece leftover, which I kept in a sealed container in the refrigerator, and it was delicious sliced on a sandwich the following day. I added some low-fat Mayonnaise as a spread before layering the slices on the bread.

BAKED CAPRESE CHICKEN

INGREDIENTS:

1 can Chopped Tomatoes
4 t Sugar
Salt & Black Pepper, to taste
4 - 6 Chicken Fillets, lightly seasoned
200g Mozzarella Cheese, sliced
Handful Fresh Basil Leaves

DIRECTIONS:

1.) Pre-heat the oven to 200 deg C (400 deg F) - Spray a large enough oven dish {for the chicken to be arranged in one layer} with cooking oil.
2.) In a small saucepan bring to boil the Tomatoes, Sugar and Salt & Black Pepper - cook over medium heat for 2 minutes, remove and cool a few minutes.
3.) Arrange the Chicken in a single layer in the prepared oven dish - pour the Tomato Sauce over.
4.) Top the Tomato Sauce/Chicken with the Mozzarella Cheese - bake 35 - 45 minutes or until the Chicken is fully cooked.
5.) Remove from the oven, scatter with the Basil Leaves and serve.

I served the Caprese Chicken with Baby Potatoes and a mixed selection of oven roasted Baby Vegetables.

  1. Yum basil is so good on everything. We grow a purple variety as well you should try it if you can get it its really nice as well.
