Bacon & Egg-Crepes Breakfast

This dish was so tasty, I could almost not believe it - everyday ingredients, but served this way and you will definitely want another helping or two.

I like making Egg-Crepes as they are different than an omelette and not just your usual sunny-side up or hardboiled egg with breakfast.  Paper thin and quick to cook {each crepe takes less than a minute!}

So, here we have meat, eggs and vegetables - not much more needed for a delightful breakfast {or light dinner} Maybe some toast, yeah? Then you're all set.


{4 portions}

250g Streaky Bacon
250g Small Button Mushrooms
5 Spring Onions, chopped
1 cup Italian Cherry Tomatoes
1 cup Spinach, torn into smaller pieces
Salt & Freshly ground Black Pepper, to taste
1 Avocado
8 Eggs, beaten and lightly seasoned with Salt & Pepper

1.) Fry the Bacon in a medium pan until crispy {or to your liking} - remove from pan and keep aside - saute the Mushrooms in the same pan until just soft - add the Spring Onions, Tomatoes and Spinach - stir-fry until the Spinach has wilted and the Tomatoes just starting to burst - season with a little Salt & Black Pepper - add the Bacon back into the pan and keep warm.
2.) Heat a smallish non-stick pan over medium to high heat - add a little of the beaten Egg {just enough to cover the bottom of the pan} - cook as you would pancakes, about 30 seconds on one side, flip over and cook another 10 - 20 seconds - repeat with the remaining beaten Egg.

Place two or three of the Egg-crepes on a serving plate - top with the Bacon/Vegetable mixture and serve with Avocado cubes and extra Black Pepper.
