Our Spring started yesterday (01 Sept) ! I am glad that Winter is on it’s merry way, slowly saying goodbye, but I also know, for a fact, in a month or two I will be complaining about the heat again. Human nature..?? I think so…

My kids had a little get together here yesterday, just a few close friends, to welcome Spring.

Not all of them drink alcoholic beverages, so, I decided, instead of the usual Coca-Cola, Fanta etc, I will make something a bit different and oh so refreshing.

Designated drivers are also never allowed to drink alcohol at my house, if they really, really want to have something stronger … driver and passengers must stay over!

Anyhow, I think most of them preferred this cooler I made – even I had a few glasses, and this is coming from a total Coca-Cola addict..

If you can find fresh fruit and juice it yourself, even the better ! But, if not, choose 100% fruit juices and double-check the ingredients.

Ingredients
  

  • 8 cups Pineapple Juice
  • 4 cups Orange Juice
  • 2 cups Passion Fruit Concentrate do not dilute
  • 2 cups Lite Coconut Milk
  • 4 cups Sparkling Soda Water
  • Crushed Ice

Instructions
 

  • Mix the Juices, Passion Fruit Concentrate and Coconut Milk
  • Add the Soda Water and Crushed Ice just before serving
