Chocolate Frozen Pies (Mini)

So chocolatey ! Rich, creamy and perfect on a hot Summer's Day

Rich and creamy ! These frozen Chocolate Milkshake Mini Pies takes only a few minutes to make the filling and the crust.

The chocolate pudding gave this dessert the creaminess and the syrup the rich flavor.

Of course, I had to taste the filling soon as it was mixed – so, so good !

The first time I almost served the filling on it’s own. without freezing the pies.

A quick glance at the ingredients for a Chocolate Frozen Pie (or Mini pies):

INGREDIENTS for Chocolate Frozen Pie:

  • 1 cup Biscuit Crumbs (use your favorite for crusts)
  • 2 TB Butter, melted
  • 2 cups Vanilla and Chocolate Ice-Cream, slightly softened (you can use one or the other as well)
  • 3/4 cup Milk
  • 1/4 cup Chocolate Syrup
  • 1 box Chocolate Instant Pudding ( 4 Servings size )
  • Whipped Cream, for serving
  • Red Glace Cherries, to decorate

I do not freeze them rock-solid – rather a firm creamy consistency.

As soon as I feel the pies are strong enough to hold shape, I remove them from the freezer, unmold and decorate them with cream and a red cherry.

However, these little pies do tend to melt quickly if taken out too early. But then again, who takes 10 minutes to eat a cupcake size of dessert? (Hope it’s not only me!)

I take all my photos outside and you can see the bottom left pie was just starting to melt. This was taken about 8 minutes after I removed them from a 2 1/2 hour freezing time.

You can also make one medium sized pie, but I would recommend the full 6 hours of freezing, as it might get messy when cutting a half frozen pie.

Kids will love you forever for combining two of their favorites in one – ice-cream and milkshake !

Ingredients

  • 1 cup Biscuit Crumbs (use your favorite for crusts)
  • 2 tablespoons unsalted Butter, melted
  • 2 cups Vanilla and Chocolate Ice-Cream, slightly softened (you can use one or the other as well)
  • ¾ cup Milk
  • ¼ cup Chocolate Syrup
  • 1 box Chocolate Instant Pudding, ( 4 Servings size )
  • Whipped Cream, for serving
  • 8 Red Glace Cherries, to decorate

Instructions

  1. Combine the Biscuit Crumbs and the melted Butter – press into 8 silicone cupcake molds
  2. Beat together the Ice-Cream, Milk, Chocolate Syrup and the Instant Pudding until smooth
  3. Spoon the filling into the cupcake molds – freeze for 6 hours or until solid enough to remove from the molds
  4. Decorate with Whipped Cream and Cherries right before serving
