Strawberry & Coconut Dessert

Today I am sharing, yet again, another simple and quick dessert recipe with you.  All the usual pantry ingredients and the only waiting time is the one to two hours to set.
You can of course play around with the flavors, use lemon jello and lemon meringue yoghurt, or granadilla …
Depending on your serving glasses/bowls you should get between 4 and 6 delicious desserts with this recipe, or simply double up and make a larger batch!


{4 – 6 servings}
1 box Strawberry Jello   {jelly}
180ml Boiling Water
1 cup Coconut Milk
1 tub (500g) Strawberry Yoghurt
Tennis biscuit crumbs    {or any biscuit you prefer}
1.) Dissolve the Jello in the Boiling Water – let cool slightly (about 10 minutes outside the refrigerator) – add the Coconut Milk and stir well to mix – divide between your serving glasses/bowls and place in the refrigerator to set completely (one to two hours).
2.) Once the Jello/Coconut Milk has set – scoop Strawberry Yoghurt over the jello and top with some Tennis biscuit crumbs.
Serve immediately or keep in the refrigerator until needed.

  1. Perfect dessert for summer and I've been curious about using coconut milk more in baking. I love anything with coconut…anything! Makes for a pretty looking one in those glass dishes too!
