Blueberry Lemon Meringue

Lemon Meringue with a decadent Blueberry Compote ~ Summer's #1 dessert

It is time for the monthly Dessert Challenge again, hosted by Sheryl, from LADY BEHIND THE CURTAIN !

Our two main ingredients for this month's Dessert Challenge are Blueberries and Lemon ! I immediately knew what I wanted to make and here I am sharing it with you today.

8 - 10 servings



1 1/2 cups Blueberries, divided
3 TB Sugar
3 TB Water
1 t Lemon Juice
Pinch Lemon Zest
Pinch Salt
Pinch Cinnamon
1 t Flour


150g Tennis Biscuit crumbles   {or your favorite crust crumbs}
6 TB Margarine, melted
2 Extra-Large Eggs, separated
1 can (397g) Sweetened Condensed Milk
1/2 cup + 2 TB Lemon Juice
1 t Lemon Peel, finely grated
Pinch Salt
4 TB Caster Sugar


*** First prepare the Blueberry Compote - it needs to cool and chill at least 2 hours before use ***

1.) Place all the ingredients {except 3/4 cup Blueberries and the Flour} in a small pot - cook over medium heat until the Sugar has dissolved - add the Flour - cook another minute -remove from the heat - stir in the remaining 3/4 cup Blueberries - cool and chill for at least 2 hours in the refrigerator.
2.) Pre-heat the oven to 160 deg C {325 deg F} - spray a standard size pie dish with cooking oil.
3.) Combine the Biscuit Crumbs and the Margarine - press into the bottom and sides of the prepared pie dish.
4.) Beat together the Egg Yolks, Condensed Milk, Lemon Juice, Peel and Salt until well combined.
5.) Pour the filling into the prepared crust - bake for 5 minutes - remove from oven.
6.) Beat the Egg Whites until stiff peaks form - add the Caster Sugar by the tablespoon.
7.) Scoop the Blueberry Compote around the outer sides {all round} over the Meringue Filling - scoop the beaten Egg Whites onto the middle - overlapping slightly with the Blueberry Compote - return to oven and bake another 10 - 15 minutes until golden brown and set.

Remove from the oven, let cool and place into the refrigerator to fully set.

Serve and enjoy !
