Sloppy Joe BBQ Bacon & Cheese


What a name!  But I promise you this is great for lunch or dinner.

The other day I was stalking my friend, Jamie's blog  LOVE BAKES GOOD CAKES looking for a certain recipe {of which, of course I forgot the name}, I found it quickly ... you should see her recipe index! but then got side tracked by all her other recipes.

At the end I found two, the one I was looking for and another similar one.  Great!  I couldn't decide, which one, right away and went to the store and got ingredients for both the dishes .... BUT, yeah, there is always a "but", the crucial ingredient was out of stock.

So here is what I did with most of the ingredients and had come up with the following:

Sloppy Joe BBQ Bacon & Cheese

{6 - 8 servings}

1 Onion, chopped
2 cups Cabbage, shredded
2 TB Olive Oil
250g Bacon Bits
500g Ground Lean Beef {Mince}
2 1/2 cups Cheddar Cheese, grated, divided
Salt & Freshly Ground Pepper, to taste
BBQ Sauce, quantity as per your preference {whatever is your favorite - I used the SPUR BBQ Sauce}
3 x 20cm French Loaves, cut lengthwise and lightly buttered

1.)  Saute the Onion and Cabbage in the Olive Oil, using a large pan over medium heat until soft - remove from pan and keep aside.
2.) Using the same pan, cook the Bacon until done - add the Ground Beef {Mince}, sir-fry until loose and cooked - transfer the Onion and Cabbage back into the pan, stir and add 2 cups Cheddar Cheese, stir over low heat until the cheese has melted - Season with Salt & Black Pepper - add the BBQ Sauce {I used approximately 1 cup, we do not like it too saucy} - heat through.

Spoon the meat mixture into the sliced French Loaves - sprinkle the remaining Cheddar Cheese over and add a little {or lots} BBQ Sauce - slice each loaf into 2 - 4 pieces.

The prepping, cooking and assembly took less than 30 minutes!
