This Ham and Cheese Pie is incredibly quick and easy to make and you should have everything on hand.

I always have a couple of rolls of frozen puff-pastry in the freezer and the other ingredients are all everyday goods.

You can of course change the ingredients to whatever you have on hand. I have experimented with a couple of different versions but like this one best and it seems to be a favorite with all.

This is perfect for a light dinner, lunch, party snack, picnic food – basically for all occasions.

I usually prepare everything in the morning (if making on a Friday or Saturday), keep it chilled and then stick the pie into the oven when the Rugby game start. Around halftime … the pie is ready to eat !

If you have a crowd over for breakfast or brunch, this is the perfect recipe too. Use bacon instead of ham, if you prefer, and serve with eggs on the side.

The eggs can be cooked anyway you like ! The pie goes well with boiled, sunny side up and even scrambled.

Then simply add your usual sides i.e tomato, maybe a pork sausage etc to the breakfast table and everyone will walk away with a satisfied tummy and ready for the day.

You should get around 12 pieces, depending on your cut. Wait a couple of minutes as the Pie puffs a lot, but settles soon. One to two pieces are more than enough as an addition to breakfast.

Serving for lunch or dinner ? I can manage two pieces with a side salad or two when we have the Ham and Cheese Pie as a light meal.

Also, this recipe is the ideal way to use up any leftover Ham. (thinly sliced, though)

Tip: when slicing the pie – use a sharp knife and slice with a sawing motion.

Ingredients
  

  • 2 rolls Frozen Puff-Pastry defrosted
  • 1 TB Olive Oil
  • 1 Onion chopped
  • 1 large Red Bell Pepper chopped
  • 6 TB Dijon Mustard
  • 15 slices Deli Ham it should be enough for a double layer if sliced thinly
  • 3 cups Cheddar Cheese grated
  • 1 Egg beaten

Instructions
 

  • Pre-heat the oven to 200 deg C (400 deg F) – line a baking sheet with baking paper
  • Heat the Olive Oil in a medium pan – saute the Onion and Red Bell pepper until soft – keep aside
  • Place 1 sheet of Puff-Pastry on the prepared baking sheet – spread the Mustard over the Puff Pastry already on the baking sheet
  • Arrange the Ham slices over the Mustard {leaving a small border all round (see photo in post)
  • Sprinkle the Cheddar cheese over and scoop the Onion/Pepper mixture over the cheese
  • Finally place the second sheet of Puff Pastry over the filling – pinch all sides closed using your fingers – make sure it is well sealed
  • Brush with the beaten Egg – bake for 30 – 40 minutes until puffed and golden brown
  • Remove from the oven and let cool 5 minutes before slicing into servings
