Chocolate Mousse in Chocolate Pancakes
These Chocolate Pancakes tastes heavenly with the rich, smooth, dark Chocolate Mousse filling. You can also only make one or the other on it’s own !

I made these delicious Chocolate Mousse filled Chocolate Pancakes for dessert one night years ago, good grief! They were terrific !!!
Needless to say it is by now one of our most requested desserts, not only family, but from our friends as well.

The super easy to make Chocolate Mousse filling is rich, smooth and so very chocolatey. You can even taste a hint of the espresso.
In South-Africa our everyday pancakes are actually known in other countries as crepes. Thin crepes (pancakes) with a generous sprinkling of cinnamon sugar is sold just about everywhere.
I make these fairly thick, as I did not want to roll them up the usual way, but rather folded them in an “S” shape with the filling in between.
You can totally make them thinner, it is up to you. This recipe yields 6 thick pancakes (about 15 centimeters / 6 inches in diameter) and if you make them thinner, you should get around 8 – 10 pancakes.

A note: If you do make them thick, one is more than enough per person (adult). Although, I can not guarantee that you would not want one or two more!

Serve these Chocolate Mousse in Chocolate Pancakes as a week night dessert, part of a special breakfast and especially when entertaining guests !
You can trim the edges as I do to make the Pancakes look a little more sophisticated and dare I say, professional !

Chocolate Mousse in Chocolate Pancakes
Ingredients
PANCAKES:
- 1 cup Flour
- 1 TB Sugar
- 1 TB Cocoa Powder
- ⅛ t Salt
- 2 extra-large Eggs
- 2 Egg-Yolks
- 2 TB Unsalted Butter melted
- 7 TB Soda Water
DARK CHOCOLATE MOUSSE:
- 100 grams Bittersweet Plain Chocolate 70% cocoa solids, broken into pieces ( 3.5 oz )
- 4 TB Strong Espresso Coffee (use when still hot)
- 2 extra-large Eggs separated
- 1 TB Sugar
- 1 t Vanilla Essence
- ½ cup Fresh Cream {whipped until stiff peaks form}
- 1 TB Caster Sugar ( Superfine Sugar )
- 1 T Cocoa Powder to dust
- Glace Cherries to decorate (optional)
Instructions
- PANCAKES: Beat together the Flour, Sugar, Cocoa Powder, Salt, Eggs, Egg Yolks and melted Butter – chill for an hour
- Add the Soda Water to the batter just before cooking the pancakes – heat a pan and cook the pancakes until all the batter has been used
- MOUSSE: Melt the Chocolate – add the hot Espresso and stir well – keep aside
- Place the Egg Yolks, Sugar and Vanilla in a glass bowl over a pot of boiling water – beat all the time and cook until the Sugar has dissolved and the mixture is thick and creamy (about 5 minutes) – add to the chocolate mixture and mix to combine
- Add the Whipped Fresh Cream to the chocolate mixture (fold this in quickly before the chocolate sets)
- Beat together the Egg Whites and Caster Sugar until stiff – fold into the chocolate mixture – chill 10 – 15 minutes
- Serve the Pancakes filled with the Mousse and dust with Cocoa Powder (decorate with Cherries if using)
