Everyone has at least one favorite chocolate chip cookie recipe. Mine are these crunchy Chocolate Chip Oat Cookies and let me tell you, I can gobble a plateful down in minutes.
The flavor combination of the Walnuts, Oats and Chocolate chips work so well in this recipe. I have once made the cookies using white Chocolate chunks, which was also delicious, but my family prefer the plain old chocolate chips.
Something else I like is cookies with burnt edges, not just dark brown, almost black ! My kids can never understand when I bake an extra batch for myself and burn them on purpose.
The recipe is only for a small batch but can easily be doubled or tripled.
Crunchy Chocolate Chip Oat Cookies
1/3 cup Butter, softened
1 1/4 cup Caster Sugar
1/4 cup Vegetable Oil
1 Large Egg
1 cup + 2 TB Flour
1/2 t Baking Powder
1 t Vanilla Essence
1/4 cup Walnuts, chopped
1 1/4 cup Rolled Oats
1/2 cup Chocolate Chips
1.) Pre-heat oven to 190 deg C (375 deg F) – line a baking sheet with baking paper.
2.) Combine all the ingredients except the Chocolate Chips – place table spoonfuls of the mixture on the baking sheet, leaving space for spreading.
3.) Sprinkle with Chocolate Chips – lightly press down – bake 15 minutes or until crispy on the edges and golden.
Cool completely on a cooling rack.
