I had some Pitas left over the other day from a previous meal, and I was in the mood for some open sandwiches and decided to use the Pitas I had, instead of bread.

This was great, because it was quick and easy to make, I had all the ingredients, and I really did not want to spend hours in the kitchen on a Saturday, especially since it is Rugby season now !

This Swiss cheese and Peppadew open sandwich was delicious and I would make it the same way again, but if you are short on one ingredient, just swop it for something similar, or whatever you are in the mood for.

That is the beauty of sandwiches - no rules ! Whatever works for you and your family. I used mild and sweet Peppadews respectively as we do not like too spicy or too hot.

SWISS CHEESE AND PEPPADEW OPEN SANDWICH

INGREDIENTS:

2 Pitas, halved
2 TB Olive Oil
1 t Dried Rosemary
4 Slices of Swiss Cheese {I only had a block and sliced it on the narrow side}
4 bottled Sweet Red Peppadews, sliced
4 bottled Mild Green Peppadews, sliced
12 Shaved Slices Smoked Lean Beef
Fresh Rocket, to serve

1 Tomato, chopped
1/2 Red Onion, chopped finely
1 t Sesame Oil
1 TB Rice Vinegar
1/2 t Sugar
Salt and Black Pepper, to taste

DIRECTIONS:

1.) Mix together the Olive Oil and Rosemary - brush the inside halves of the Pitas and toast under the oven's grill element until golden brown - remove and let cool.
2.) Arrange the Swiss Cheese, Peppadews, Shaved Beef {3 slices per sandwich} and the Rocket on the toasted Pita halves.
3.) Place the Tomato and Onion in a small mixing bowl - mix together the Sesame Oil, Rice Vinegar, Sugar and Salt/Black Pepper - stir into the Tomato and Onion.
4.) Top each sandwich with a scoop of the Tomato and Onion mixture and serve.
