Country Club Chicken

Fantastic dinner and a family favorite ~ Quick & Easy Country Club Chicken served over Pasta

I love anything Country Club, sandwiches, salads or over rice/pasta.

This time I wanted a pasta dish, something different than what we normally have.  I started listing everything usually found on different versions of a Country Club and after some add-ons and deductions of ingredients, I had come up with this recipe.

It is a very filling dish and can easily feed 6 - 8 people. When I put the recipe together on paper, it looked just right for about 4 servings, but boy, was I wrong ! The bacon and cheese make the dish very rich and filling and even though the quantities look on the scant side, it is not.

Next time you need to feed a crowd {especially if you have teenagers with friends over!} this is the perfect dish to make.


Country Club Chicken



6 Servings

INGREDIENTS:

250g Bacon Bits
3 Large Chicken Fillets, cubed
Salt and Black Pepper, to taste
2 TB Butter
250g Mushrooms, sliced
Bunch Spring Onions, chopped {white and green parts}
1/3 cup Dry White Wine
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 1/2 cups Mozzarella Cheese, grated

DIRECTIONS:

1.) Cook the Bacon until crispy - remove from pan and keep aside.
2.) Season the Chicken with Salt and Pepper - Using the same pan and bacon drippings, cook the Chicken until done - remove from pan and keep aside - drain the liquid from the pan.
3.) Melt the Butter {same pan} - saute the Mushrooms until soft - add the Spring Onions - fry another 1 minute - add the Wine and both cans of soup - stir to combine.
4.) Add the Chicken and 3/4 of the Bacon - heat over medium heat.
5.) Add the Mozzarella Cheese - stir and cook until the Cheese has melted and is bubbly.

Serve over Pasta with the remaining Bacon, extra Mozzarella Cheese and garnish with Spring Onions.
