Cheesy Tater Tot Casserole

All-In-One dinner sorted out quickly and kids love this { as do adults! }

I have finally found Tater Tots {we have them as Tasty Taters} at one of our factory stores.  Never seen these in any supermarket, so I was very excited when my cousin, Erica, forwarded an e-mail to me, containing a price list from #McCain - the factory store which is open to the public and there on the list - Tasty Taters !

I knew it had to be the same, or at least close to, as used in so many recipes I have found on the internet and because I never had access to them, I never bothered to even try to make my own {still not even sure one can make them yourself!}

Anyhow, as soon as I had a few bags in my freezer, I started to construct a recipe. I did look up a couple, but thought, seeing as this was my first experience with Tater Tots, I should at least come up with my own recipe.

Here goes ..



Cheesy Tater Tot Casserole



INGREDIENTS:


2 TB Olive Oil
500 Lean Ground Beef
2 t Garlic, crushed
1 Onion, chopped
250g Mushrooms, sliced
Salt and Pepper, to taste
1 can Mushroom Soup
1 cup Milk
1/2 cup Sour Cream
Black Pepper, to taste
250g Frozen Mixed Vegetables, defrosted {I like the beans, corn and carrot combo}
2 cups Cheddar Cheese, grated {divided}
750g Tater Tots, half defrosted

DIRECTIONS:

1.)Pre-heat the oven to 200 deg C (400 deg F) - spray a 20 x 30cm oven dish with cooking oil
2.)Heat the Oil in a large saucepan - cook the Ground Beef until done - remove from pan and keep aside.
3.)Using the same pan (add more Oil if needed} - saute the Onion and Garlic until soft - add the Mushrooms and continue to cook until light brown and soft.
4.)Add back the meat and season to taste - spoon mixture into the prepared oven dish.
5.)Pour the Mushroom Soup and Milk into the saucepan over medium heat - stir to combine - add the Sour Cream and season to taste with Black Pepper - remove as soon as the mixture is warm {do not let it boil}.
6.)Scatter the defrosted Mixed Vegetables over the meat followed by the Soup mixture.
7.)Sprinkle half the Cheddar Cheese over the Soup - top with the Tater Tots and end with the remaining Cheddar Cheese - bake 35 - 40 minutes until bubbly and the Tater Tots are golden and done.
