Today is our Silver Wedding Anniversary - yep, 25 years of marriage and we both survived this far !  I threaten to divorce Roy every second day - okay, maybe not every second day, but at least every third day ! And I am sure the feeling is mutual ..haha. 

Main thing is... we are still together, are blessed with two of the most wonderful kids in the whole world and when we need/want to, we make quite the team as a family. So, what have I learnt over the 25 years of marriage?  It's most definitely not all roses and moonshine, that I can guarantee. There are the ups and the downs, both between us as husband and wife, but extended family {by that I mean everyone else, besides us and the kids} can bring just as much joy as a pain in the backside.

We learnt to deal with it or live with the problem if there is no fix. That's the give and take parts. The most important thing however, which we both agree to {strangely enough!},  marriage is a never ending lesson in life and it needs attention and building every single day - no matter how small or insignificant something seems to be. Most of us do not even realize that we are building/working on our marriages on a daily base.

Quick timeline for those of you interested

- We met at my sweet 16th party {both 16 years old - young? - and could not stand one another at first glance!}
- Got married when we were 19 - a little young, but oh well ..
- Favorite son, Dimitri was born 3 years later
- And our favorite princess, Cheri, arrived exactly 1 year and 9 months later

That's it - short and sweet !

I am sharing a filling and rich soup recipe today, which is something between a hamburger and Mac and Cheese. I make this beefed up version all the time during Winter and every now and then in Summer as well.

It is, however, not a soup which keeps well, and therefore make it right before you want to serve the soup. This only takes a little while to cook anyway ...  perfect as a last minute dinner idea.

Oven fresh bread and this soup is a combination made in heaven !  Pinky promise !

Beefed Up Mac & Cheese Soup

  • 1 TB Olive Oil
  • 1 Onion, chopped finely
  • 3 Celery Stalks, chopped finely
  • 300g Lean Ground Beef {Mince}
  • 1/4 cup Flour
  • 3 cups Chicken Stock
  • 1 cup Macaroni {or any other pasta}
  • 1/2 cup Fresh Cream
  • 2 t Dijon Mustard
  • 3 cups Cheddar Cheese, grated
  • Cayenne Pepper, to taste
  • Spring Onions, to garnish {optional}
  1. Heat the Olive Oil and saute the Onion, Celery and Garlic until soft - add the Ground Beef and cook until loose and done.
  2. Sprinkle over the Flour - stir-fry for 1 minute.
  3. Add the Chicken Stock and Macaroni - bring to the boil and reduce heat to medium - cook until the Macaroni is tender {about 7 - 10 minutes}
  4. Add the Cream, Mustard and Cheddar - stir until the cheese has melted {do not let the soup boil again}
  5. Season to taste with Cayenne Pepper. 
  6.  Serve, garnished with Spring Onion {if using}
