Cake Mix S'Mores Snickerdoodles

Cake Mix S'Mores Snickerdoodles ~ Gooey Snickerdoodles mixed and baked within 30 minutes ~ crunchy or chewy #Cookies #Snickerdoodles #Smores

I normally try to avoid cake mixes, or any pre-mixed ingredient, but life happens, and sometimes you need/want something in a hurry.

Well, this recipe is perfect. The Snickerdoodles will be mixed and baked in less than a half hour. I like mine between soft and crunchy - which is chewy. That is where your personal taste comes in, bake it for 10 - 12 minutes to get a soft cookie, 15 minutes for a chewy cookie and if you prefer them really crunchy, bake for up to 18 minutes. But, do keep an eye on them as these cookies can burn suddenly.

Of course, the added Marshmallows helped a lot in the chewy, slightly gooey side !

I like mine on the large side, but if you prefer smaller, go for it - reminder though, the smaller the cookies, the less time it will need to bake.


  • 1 Box Vanilla Cake Mix
  • 1/2 cup Butter, melted
  • 1 Extra-Large Egg
  • 1 t Vanilla Essence
  • 1/2 cup Mini Marshmallows {or chopped}
  • 1/4 cup Cinnamon Sugar {in a small bowl}
  1. Pre-heat the oven to 180 deg C (350 deg F) - line two baking sheets with baking paper.
  2. In a medium bowl, mix the Cake Mix, Butter, Egg and Vanilla - the mixture will look a little dry.
  3. Add the Marshmallows and mix well.
  4. Form 18 golf ball size balls - roll in the Cinnamon Sugar and place on the prepared baking sheets [about 2.5cm - 1 inch apart] - bake 8 minutes - open the oven and using the back of a spoon gently press the cookies down - bake another 2 - 4 minutes {or to preference}
  5. Remove from the oven and cool on a cooling rack.

Get baking and fill those cookie tins !
