Warm Potato Salad On A Stick

A Potato Salad on a Stick? Deliciously different !  And there's bacon too ;-)

This can be cooked over the coals, in the oven or use a health griller - the open type with no lid.  We had ours over the coals, of course! Best way to cook most meals and according to me, always the tastiest. 

Although, we almost did not get a chance to use the BBQ outside, as it started raining just as these kebabs were placed on the grill. {First rain for Spring, however little, it has at least moistened the dry, dusty earth.} Fortunately, bacon cooks quickly and we were done in a couple of minutes.

I can not wait till the kids are home again - both at the same time, preferably! - because I think they would really enjoy this salad.


6 - 8 Kebabs

500g Baby Potatoes, scrubbed clean
250g Streaky Bacon
1 cup Greek style Yoghurt
1/2 cup Dill, finely chopped
3 Gherkins, finely chopped
2 t Garlic, crushed
1 Red Onion, finely chopped
Salt & Freshly Ground Black Pepper, to taste
2 - 3 TB Olive Oil

  1. ) Cook the Baby Potatoes until just tender {skin on} - approximately 15 minutes.
  2. ) Meanwhile prepare the Dressing - combine the Yoghurt, Dill, Gherkins,Garlic and Red Onion in a medium mixing bowl - season to taste with Salt & Black Pepper - transfer to a serving dish and chill until needed.
  3. ) Drain the Potatoes and wrap half in a piece of Bacon - thread onto wooden kebab sticks {soaked in water for 45 - 60 minutes}starting with one Bacon wrapped Potato, followed by only a Potato, repeat and end with a last Bacon wrapped Potato.
  4. ) Drizzle with Olive Oil and grill {or bake} until the Bacon is done to your liking.
Serve with the Yoghurt Dill dressing on the side.

This is a fun and delicious salad !  I would say 5 Baby Potatoes ~ as per the above ~ per adult portion and 3 Baby Potatoes per child portion.

  9. I love pretty much anything on a stick (probably from my days of living in Iowa where the state fair put every edible thing on a stick, including pork chops :) and the bacon makes this sound even more amazing!
