Hawaiian Pineapple Chicken


Hawaiian Pineapple Chicken
Do you like easy dump and bake recipes? I sure do :-) I make this dish on a regular basis but have never shared it on the blog.

There is no pre-browning of the chicken and you can decide whether to leave the skin on or remove it for a healthier meal

I usually serve this with rice and a side or two.

HAWAIIAN PINEAPPLE CHICKEN

{adapted from the recipe book Kortpadkos}

6 portions

1 kg Chicken pieces
1 1/2 t Salt
1/2 cup Mayonnaise
1/2 cup Chutney
2 TB Mustard
1 can Pineapple, crushed

1.) Pre-heat the oven to 180 deg C {350 deg F} - spray a baking dish with cooking spray.
2.) Place the Chicken pieces in a single layer in the baking dish - sprinkle the Salt over.
3.) Combine the remaining ingredients and pour over the Chicken - bake for 1 1/2 hours, uncovered, until tender and cooked through.

Serve with rice, mash or noodles and a side or two {veggies or salads}
