Rich Butterscotch Pudding

With A Blast: Rich Butterscotch Pudding  {with Toffees!}   #dessert  #pudding  #nobake

I am noticing a trend in my dessert choices these days - Butterscotch! This dessert was one of those described as to-die-for-desserts {according to me, anyway..}

The pudding itself does not have any toffees as an ingredient, only a topping, but so delicious! The creaminess of the pudding and the chewy toffees work well together.

As you can see, these desserts set very nicely. I added the Toffees after setting and just before serving.


{8 servings}

1 cup Light Brown Sugar
1/4 cup Cornflour
1/4 t Salt
4 cups Fresh Cream  {whipping cream/double cream or half-and-half} - your choice
5 Egg Yolks, lightly beaten
1/4 cup Butter, cubed
2 t Vanilla
Chocolate covered Toffees, for the topping

1.) Combine the Sugar, Cornflour and Salt in a medium pot - add the Cream and stir well. Cook and stir over medium heat until thickened and bubbly - cook another 2 minutes. Remove from heat.
2.) Scoop little by little of the mixture into the beaten Egg Yolks until it has warmed slightly - now add the Yolk to the pot - bring to a slow boil, reduce heat and simmer for two minutes - remove from heat.
3.) Stir in the Butter and Vanilla until the Butter has melted - pour mixture into a large bowl {or individual servings as I did} - cover with plastic wrap to prevent skin forming - chill 4 - 5 hours until set. {the smaller the serving bowls, the quicker the dessert will set}

Serve with Chocolate covered Toffees and enjoy every heavenly bite !

  4. I've never thought to make my own butterscotch pudding! (Light bulb coming on!) I saw your title and quickly shoved a butterscotch hard candy in my mouth - otherwise I've have jumped up and ran to the store to buy all the ingredients to make this right now.
