Baked Bacon & Broccoli Pasta

This was one of the most delicious pasta dishes I had in some time.  Nothing funny or strange about it, but just the addition of Broccoli gave it a wonderfully different taste.

The Broccoli was still crunchy, not raw crunchy, more like a stir-fry crunch.

Serve this dish with some salads on the side and you have a perfect and quick weeknight dinner.


{6 servings}

500g Shell Pasta
250g Streaky Bacon, chopped
1 Large Onion, chopped
3 t Garlic, crushed
300g Broccoli Florets
2 cups Cheese Sauce    {homemade or store-bought}
1 cup Cheddar cheese, grated

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a large oven dish with cooking spray.
2.) Cook the Pasta as per the instructions on the packet.
3.) Meanwhile, cook the Bacon until almost crispy, remove from the pan and keep aside.
4.) Using the Bacon fat leftover in the pan, saute the Onion and Garlic until soft - add the Broccoli and stir-fry 5 minutes.
5.) Add the Bacon, Onion/Broccoli mixture and the Cheese Sauce to the cooked Pasta - stir through and transfer to the prepared oven dish - sprinkle the Cheddar Cheese over.
6.) Bake 30 minutes until cooked through and the cheese has melted.

Serve and enjoy!
