Sausage & Bean Casserole

With A Blast: Sausage & Bean Casserole    #easydinners   #casseroles

A delicious one pot meal with sliced French Bread on top which gets toasted under the grill in the oven, or if you do not have an oven proof pot/pan - serve it with normal toast or even buttered French Bread.

The sliced bread which is placed on top of the dish, soak some of the juices from the below, which makes it saucy on the bottom and nice and crispy on top.

Whenever I see a pan with beans in them, I am thinking about the cowboys of days gone past - you know, all the movies show them sitting around a fire, with a pan of beans and ?? stewing, which they then dish up in their tin plates.  Looks so comfy, wonder if this was sort of their comfort food?

We enjoyed this meal tremendously and it will become another family favorite, quick, easy and definitely comforting especially during our colder months now.


{serves 4}

2 TB Olive Oil
600g Chipolata Pork Sausages  {or any other thin sausage}
1 Onion, halved and sliced
3 t Garlic, crushed
1 can (400g) Chopped Tomatoes
1 TB Sugar
2 cans (400g each) Borlotti Beans, drained
1 cup Chicken Stock    {if using beef sausages, sub this with Beef Stock}
Salt & Freshly ground Black Pepper, to taste
1 French Baguette, sliced    {I did the toasting bit in two batches, as we used the whole baguette}

1.) Heat the Olive Oil in a large oven proof pan, with a lid - fry the Sausages until done - remove and keep aside.
2.) Using the same pan - saute the Onion and Garlic until soft - return the Sausages to the pan - add the Tomatoes, Sugar, Borlotti Beans and the Stock - season to taste with Salt & Black Pepper - cover and simmer about 30 minutes.
3.) Layer the bread on top of the meat/beans - place under the oven grill and toast until the bread is golden brown and crispy.
