Mexican Mac and Cheese

With A Blast: Mexican Mac and Cheese  {quick, easy & delicious!}  #casserole  #mexican

No idea what's up with me and Mexican dishes lately !  But I love it, never too hot, just mild, and our family is happy.

This is a huge {and I do mean HUGE} dish, so if you are only feeding 3 - 4 people, you can easily half the recipe.

We had some leftover after I dished up, but just about everyone went back for seconds and the whole casserole was finished off in no time at all.

You do not need to use Pork sausages, any sausage will do {or if you prefer ground beef ... why not!}

MEXICAN MAC AND CHEESE

{6 - 8 servings}

500g Pasta - shells, penne, macaroni {whichever you prefer}
1 TB Olive Oil
1 1/2 cups Onion, chopped
800g Mini Pork Sausages
1 Large jar Salsa {I used mild - the tomato/greenpepper/garlic flavor}
4 cups Cheddar Cheese, grated
Tomato, sliced, to serve

1.) Pre-heat the oven to 180 deg C (350 deg F) - Spray a large oven casserole dish with cooking spray.
2.) Cook the Pasta as per the instructions on the packet.
3) Meanwhile, in a large pan, saute the Onion in the Olive Oil until soft - remove from pan and keep aside - add the Pork sausages to the same pan and fry in batches until done - add back all the sausages and the Onion - add the Salsa and heat through.
4.) Layer half of the cooked Pasta in the bottom of the prepared oven casserole dish - half the Sausage mixture and half the Cheddar cheese - repeat, ending with Cheddar cheese.
5.) Bake, uncovered, for 25 - 30 minutes until bubbly - remove from oven, let stand 5 minutes.

Serve with sliced Tomato and enjoy!
