Hawaiian Butter Bean Salad

With A Blast : Hawaiian Butter Bean Salad

This is another salad I make regularly, it is very different than the usual three-bean salad and very refreshing with any meal.

I have been making this salad for such a long time, I know the recipe by heart, but I could not find it among any of my recipe books where I must have found it - I might have looked for the wrong name or maybe it was in a magazine.

Anyhow, if you are tired of the usuals - give this one a try as it is very quick to make and can easily be doubled or tripled if needed.


{10 - 12 portions}

1 can (410g) Butter Beans, do not drain
1 can (425g) Pineapple Pieces, do not drain
1/4 cup Brown Sugar
1/4 cup Vinegar
2 TB Cornflour mixed with a little water 
Spring Onions or Chives, chopped

1.) Place all the ingredients {except the Spring Onions/Chives} in a pot {for stove top} or a microwavable bowl {for microwave} - heat over medium heat {stove top} or HIGH {microwave} until thick - if using the microwave, stir every 1 - 2 minutes.

Let cool completely, garnish with the Spring Onions or Chives and serve chilled.

This salad keeps well in a sealed container for up to two days.

  9. WOW! I've never had this. It looks great! We are having butter beans in our chili tonight. Glad we decided on chili because it's very chilly out side!!
