Sweet & Sour Beef on Egg Crepes

Have you ever had Egg Crepes? Not Omelettes, these are thin - crepes.  So delicious, we all loved this dish, not sure whether it was the topping, the crepes or the combination.

I think I will go with the combination of the two as both were really good.  The only extra we added was some dinner rolls.

This could also be a great brunch, come to think of it ! 

I piled up 3 or 4 crepes per plate and then added the topping.  There was some strange looks as everyone expected a pancake type of thing, but they were pleasantly surprised to bite into an egg crepe.

Sweet & Sour Beef on Egg Crepes

{serves 4}

6 Extra-Large Eggs
1/4 cup Milk
2 t Olive Oil
400g Thin Steaks, cut into strips
1 Red Bell Pepper, thin strips
1 Green Bell Pepper, thin strips
1 Yellow Bell Pepper, thin strips
1/3 cup Sweet & Sour Sauce  {your favorite}
Parsley or Coriander, to garnish  {optional}

1.) Beat the Eggs and Milk together - heat a non-stick frying pan over medium heat - use about 1/2 of a soup ladle Egg mixture per crepe - tip and turn the pan in order for the mixture to cover the bottom - cook until done {about 1 minute} turn over and cook the other side as well - repeat until all is done - keep warm.
2.) Heat the Olive Oil in a large pan - stir-fry the Steak strips until cooked {about 2 minutes} - add the Pepper strips and stir-fry another 3 - 4 minutes - add the Sweet & Sour Sauce, simmer an additional two minutes.

Place 2 or 3 crepes on a plate - top with the Sweet & Sour Beef and serve.
