Green Beans & Tomato {side dish}

I have guest posted over at Leslie from FROM A DAUGHTER last week and shared this recipe for a tasty side-dish.

Re-posting today for all of you who might have missed it.

I think side-dish recipes are a bit neglected, there are many for main meals, desserts, meatless and even the starches like potatoes, but not that many recipes for side dishes. This one is quick and delicious.  Give it a try next time you want to serve something a little different.

Green Beans & Tomato {side dish}

6 side servings

500g Green Beans, ends clipped off and cleaned
350g Cherry Tomatoes {Italian style is very nice}
2 t Garlic, crushed
Salt & Freshly Ground Black Pepper, to taste
1/3 cup Olive Oil
2 TB Balsamic Vinegar

1.) Place the Green Beans in a medium saucepan, cover with water and boil for 5 - 10 minutes {the beans must still be crunchy} - drain and return to the saucepan.
2.) Add the Tomatoes, Garlic, Salt & Pepper, Olive Oil and Vinegar to the Green Beans.
3.) Heat through - I like to keep it on medium heat for about 2 minutes.

Stir gently during the 2 minutes of final heating

Serve immediately with your preferred main meal!
