Coconut Jam Braid

This was my first braided kind of baking and it turned out delicious.  I always thought that it would be quite complicated but it was very easy.

To put it together and ready for the oven took less than 10 minutes!  Something else which is great about this  braided dessert is that you can cut it into finger pieces and if served with whipped cream or custard, just dip it in the cream or custard - party food ...

It is just as delicious cold as it is warm, therefore, great for a Summer or Winter sweet snack.

Coconut Jam Braid

{12 - 15 slices}

1 Roll Frozen Puff Pastry, defrosted
1/3 cup Apricot Jam  {I used smooth}
1 cup Coconut
2 Extra-Large Eggs {one in the recipe and one for brushing}
1 TB Sugar
Cinnamon, to dust {optional}

Whipped Cream/Custard or Ice-Cream, to serve

1.) Pre-heat the oven to 200 deg C (400 deg F) - Line a baking sheet with baking paper.
2.) Roll out the Puff Pastry - mark it lightly into three sections {do not cut}
3.) Spread the Jam over the middle section - mix the Coconut, one Egg and Sugar in a small bowl - spoon over the Jam.
4.) Slice the side sections into 2cm {just under one inch} strips - slicing with an angle.
5.) Fold the first strip on the one side, over the center section {it should lie with an angle} - then fold over the other side - repeat this until done - pinch the pastry to close the ends.
6.) Transfer the braid to the lined baking sheet - brush with the remaining Egg - bake for 30 minutes until golden brown.

Cool for a few minutes, dust with Cinnamon {if using} and serve warm or leave to cool completely and serve cold.
