Cinnamon Apple Cake

I most definitely have a thing for Cinnamon this week, or maybe it only feels that way because I am catching up with my posts...

The cake batter part is really throw it all together, mix until smooth {it almost has the consistency of whipped cream} pour over the prepared apples and bake!

I served this with thin pouring cream, oh. so. good....

Once again, I forgot Cheri does not like warm apples - it is just as delicious cold, but she declined.  Might be because she is a bit under the weather this week, a bit of a Spring cold ..

After I baked and sliced the cake, I placed one piece with the apples at the bottom on a plate - did not look like much,  so I flipped the others over with an egg lifter in order for the apples to be on top ... much better, and it did look more delicious {tricks of the eye or what..?}

Cinnamon Apple Cake

3 TB Butter
8 medium Cooking Apples, peeled, cored and sliced in thick pieces
1 1/2 t Ground Cinnamon
2 TB Soft Brown Sugar

3 Extra-Large Eggs
175g Butter, softened
1 cup Self-Raising Flour
3/4 cup + 1 TB Caster Sugar
50g Ground Almonds
2 TB Milk

Fresh Cream to serve

1.) Pre-heat the oven to 180 deg C (350 deg F) - Spray a 20 x 30cm oven dish with Spray 'N Cook.
2.) Melt the Butter over medium heat in a large pan - add the Apples and stir-fry until golden brown.
3.) Sprinkle the Cinnamon and Brown Sugar over the Apples and stir to mix - remove from heat and place on the bottom of the prepared oven dish in a single layer.
4.) Combine the Eggs, Butter, Flour, Caster Sugar, Almonds and Milk in a medium mixing bowl - beat until smooth {will look like thick whipped cream}.
5.) Spoon the batter evenly over the Apples and bake for 45 minutes.

Remove from the oven - let the cake stand about 10 minutes, cut into blocks and serve with Fresh cream.
