Chia seeds are all the rage now and I have finally, after weeks of searching!, found one lonely packet. It was stuck way in the back of the shelf at our local supermarket, to use in a recipe. Of course I had to try it in a dessert first 😉

The Chocolate Coconut Chia Pudding is delicious and so quick to make.. pity about the chilling time, but we can not have it all.

I looked at other recipes to try and get the whole how-to etc on the Chia Seeds, but the recipes out there range from complicated to easy.

Some with a few hours chilling time to overnight, basically the same recipe but double the seeds, baked goodies to no-bake desserts, and so the list carried on.

I am happy to use this recipe again, but am also looking forward in experimenting with savory dishes.

Muffins and really whatever else looks interesting, as the list for Chia seeds being healthy is quite impressive.

Ingredients
  

  • 1 ½ cups Coconut Milk
  • ½ cup Caster Sugar ( Super fine sugar - not powdered sugar )
  • 1 t Vanilla Essence
  • 2 TB Cocoa Powder
  • ½ cup Chia Seeds
  • Coconut Flakes to decorate

Instructions
 

  • Beat together the Coconut Milk, Caster Sugar, Vanilla and Cocoa Powder until well combined
  • Stir in the Chia Seeds – pour into 4 half cup sized serving jars or bowls – chill 4 – 6 hours in the refrigerator
  • Decorate with Coconut Flakes before serving

    I love chia seed pudding. I have found one that sets up in 10 minutes. It is from the Trim Healthy Mama Facebook page. Sometimes I add cocoa powder (1 TBSP) and a capful of raspberry or orange extract. Yummy.
    1 cup golden flax meal . . . 1 cup unsweetened coconut . . . 1 cup chia seeds
    Mix in a mason jar. . . .. Use ⅓ a cup of the previously made mix and add ½ cup almond milk. Stir and add a splash of vanilla, stevia, 1-2 Tbps of protein powder. Let sit ten minutes to thicken.

    Sounds pretty simple, and super yummy. I have a huge bag of chia seeds in my pantry waiting for fun recipes like this one. I add chia seed to my morning smoothies, and just found a doughnut recipe that calls for them. I buy mine in bulk at my grocery store.

  10. Confession I haven't tried chia seeds but my sister swears by them, anything with chocolate and coconut has to be good 🙂
