Feta Meatballs in Eggplant on Pesto Pasta

Now and then I like surprising my family with something a little out of the ordinary .. like these Feta Meatballs in Eggplant on Pesto Pasta.

Roy and I enjoyed the meal as a whole, but Cheri's favorite part was the Feta Meatballs, which is very tasty, even on it's own. I made them again, smaller with a toothpick stuck into each Meatball and served them with a light, not too strong dipping sauce.

When I found the recipe on a magazine's site, I pinned it immediately, but it took me a few weeks before I actually made the dish. I really wasn't sure how my family would react to the Meatballs wrapped in a piece of Eggplant. But, in the end all of us enjoyed the pasta enough for me to make it again.

As mentioned, the Meatballs were already made again and now I am thinking of shaping the next batch into burger patties, instead of meatballs ! Just imagine the variations :-)


Serves : 4


2 Large Eggplants {Brinjals}, sliced approx 5mm thick
2 TB Light Olive Oil

500g Lean Ground Beef
2/3 cup Low-Fat Feta Cheese, crumbled
1 Egg, beaten
1/2 cup Fresh Wholewheat Breadcrumbs
Salt and Black Pepper, to taste

500g Spaghetti, cooked as per the instructions
3 TB Basil Pesto {increase if you prefer}


1.) Pre-heat the oven to 200 deg C (400 deg F) - line 2 baking sheets with baking paper and spray a 20 x 30cm oven dish with cooking oil.
2.) Sprinkle the Eggplant slices liberally with Salt - leave 30 minutes, rinse and pat dry - arrange slices on the baking sheets - drizzle with the Olive Oil - bake 15 minutes until soft.
3.) Mix together the Beef, Feta, Egg, Breadcrumbs and season to taste with the Salt and Pepper - roll into 16 - 20 Meatballs and place on the prepared oven dish - bake 20 - 25 minutes or until cooked through, {simultaneously if your oven is large enough} with the Eggplant.
4.) Fold a slice of Eggplant in a V shape, place a Meatball in the center and secure with a toothpick.
5.) Stir the Pesto into the Spaghetti - serve the wrapped Meatballs on top of a bed of Pesto Spaghetti.
